Hot and sweet

Just something to consider if one finds themselves before a grocery store freezer where frozen fries lurk: These took five minutes to prep and cooked with little attention. They are tasty: Citrusy, salty, and piquant all at once with a great and obligatory fry crunch. Full of vitamin C and antioxidants and delicious. Yes, maybe you should feel a little guilty if you don't try this at home. Oh! And next to it: The Fresh Market Blue Cheese Burger, it was also delish.




Sweet Potato Oven Fries
Serves 6

4 medium yams, cleaned and sliced into evenly sized wedges
4 tablespoons extra virgin olive oil
1 teaspoon chili powder
1 teaspoon good Hungarian sweet paprika
1 teaspoon abobo seasoning
1 teaspoon ground ginger
1 tablespoon lime zest
Juice of 1/2 lime
Kosher salt and freshly ground black pepper
Lime slices for garnish

Preheat oven to 400 degrees. Heat a baking sheet in the oven for 15 minutes.

In a large bowl, place olive oil, chili powder, paprika, adobo, ginger, lime juice, and lime zest. Whisk until evenly combined and quickly add the sweet potatoes. Toss wedges until completely and evenly coated.

Remove the baking sheet from the oven and transfer the wedges onto the sheet, spreading out evenly and being sure none overlap. With a spatula, place any remaining marinade on top of the wedges, be sure to get it all.

Return baking sheet to the oven and cook until the bottoms of the wedges are golden, about 15 minutes. Turn the wedges to the opposite side and bake again for 15 minutes or until golden on this side.

Serve with lime wedges for garnish.

My SP fries never get crispy, baked or deep fried. Any ideas to help? Thanks!

Hullo Vamp - glad you're well! Salt them up more heavily than you want to, turn only once when you are sure they are cripy on one side. They will never be twice-fried cruchy but these were pretty toothsome and had a nice bite! Also, I saw some pillows y/day you light like... posting them to entertains tonight!
